Hi everyone welcome back:) I just made these gorgeous bruschetta for breakfast this morning to my kids and husband and thought I have to share them with you .
It takes no more than 5 minutes to prepare and its also very nutritive for the kids .  
I used red , green , orange and yellow bell peppers but you can use any colours you have in hand.I also added cumin flavour to the feta cheese, you can add any herbs you prefer like thyme , mint or basil.
I really enjoyed these bruschetta's and I hope you like them too.

Ingredients:

1) 3-5 slices of french bread .
2) feta cheese.
3) Chopped red, green , orange and yellow bell peppers .
5)1/2 teaspoon cumin.
6) olive oil.
7)butter.

Directions:

1) Spread butter on the top of french toast and put in the oven at 150 degrees celsius for 10 minutes.

2) In a bowl prepare the spread, add the feta cheese, chopped peppers , cumin and olive oil and mix well.

3) Spread it over the hot toast and serve warm.

I was baking these cashew crackers with nigella seeds this morning and it was such a delight ! Its not just crispy and delicious but also a very healthy snack especially for children. Its incredibly easy to prepare and an absolute delight to snack on between meals . I have shared earlier the Gluten Free Almond Crackers with Paprika and Curry and they were gorgeous, check them out!
So I wouls say lets get started:
Ingredients:

1) 150 grams unsalted cashews.
2) 150 grams whole wheat flour.
3) 1 egg.
4) 1 and a half teaspoon salt.
5) 1 tablespoon olive oil.
6) 100 ml boiled water.
7) 2 tablespoons cumin powder.
8) A handful of nigella seeds.


Directions:


1) In a food processor grind the cashews till they become very fine (the finer the better).

2) In a bowl add the ground cashews ,whole wheat flour , salt and mix with boiled water.

3) Add the egg and keep on blending until the dough combines .

4) Spread the dough as thin as possible and then top with the nigella seeds and use the heart and stars cookie cutters to make beautiful shapes ( my daughter took over in this part:))

5) Put in the preheated oven at 180 degrees celsius for about 20 minutes or until they are done.

6) You can serve with cream cheese, lebneh or tzaziki dip sauce.

Fruit salad are quiet easy snacks that makes me easily feel full. I love to make different fruits combinations as well as different dressings to make it more unique and also encourage my daughter to eat them too . Today I used  pomegranate molasses and some peppermint extract in the dressing (its seriously the perfect combination ever), if your are not familiar with pomegranate molasses its basically a thick tangy reduction of pomegranate juice that has a syrup like consistency and has an astringent and sour taste. Its very common in the middle eastern food.
Pomegranate molasses are not only used in dressings , I like to marinate my chicken , steak and even fish in it .

Ingredients:

1) 1 chopped apple.
2) 1 pomegranate peeled with seeds separated .
3) 2 chopped kiwi.
4) 2 tablespoons of pomegranate molasses.
5) 3-4 drops peppermint extract.

Directions:

Add all the ingredients together and drizzle the dressing on it , Now you are ready to dig in and enjoy !

If you are a garlic lover like me , you are going love this fabulous garlic dip that just compliments any dish you serve! You can serve it with chicken, steak, fish, fries or even pita bread and it just makes the flavours divine.  you will be amazed by how easy it is to prepare it .

Ingredients:

1) 5-6 cloves of minced garlic.
2) 2 lemons juiced.
3) About half a cup of canola oil ( can be substituted by vegetable oil).
4) Food processor.
5) 1 egg white .

Directions:

1) In the food processor add the minced garlic with 1 teaspoonful of oil and lemon.

2) Start the food processor on high speed and then alternate adding small amounts of the oil and lemon juice from the upper opening while the food processor is on.

3) When all the oil and lemon juice is finished, add salt to the taste you like.

4) Finally add the egg white and keep on blending for a couple of minutes until it reaches the thick consistency of the garlic dip.

5) Serve with your favourite dish .
